Spring is here! Cherry blossoms are beginning to bloom, the sky remains light into the evening, and the temperature is rising. However, spring means more than just beauty, rebirth, and an end to another wonderful winter, it also means strawberries! Mission Community Market welcomes back Yerena Farms to our Thursday market. Come by this week to grab a basket or three of this season’s freshest organic strawberries!

Spring Strawberry Salad Recipe

Basket of fresh strawberries from Yerena Farms
Feta cheese from Achadinha Cheese Co.
Roasted Almonds from Winters Fruit Tree
Spring greens from Blue House Farm

Balsamic Vinaigrette: 1 part balsamic, 1 part organic olive oil, dried basil, and a dash of truffle salt to cut the acid

Directions:

Wash and dry the spring greens. Gently sliver the strawberries to display their beautiful insides and sprinkle on top of cleaned salad. Add crumbled goat cheese and chopped almonds. Drizzle with balsamic vinaigrette and enjoy with a side of buttered sourdough from Marla Bakery or a pasta dish from Home Maid Ravioli!

Mercado Kitchen: Asian Pear & Walnut Risotto

This week’s recipe is the perfect representation of the change in seasons from winter to spring that we see here in San Francisco. It’s incredibly light and gentle on the palate, balancing a blend of Mission Community Market’s sweet and savory offerings.

Stop by K&J Orchards this week to try their mouthwatering asian pears! The subtle sweetness of the fruit expands into a powerful flavor with each bite. This family-owned farm lies north of San Francisco in Winters, CA and produce a variety of tree fruits throughout the season.

Next, walk just a few stalls up 22nd street and visit Achadinha Cheese Company’s stall. to try their wide variety of goat cheeses. Their enthusiastic salesperson Chris will intrigue you with all the creative combinations you can think of (and some you may never have thought of)!

Asian Pear Walnut Risotto

Ingredients:

1-2 Asian Pears from K&J Orchards
Butter
Coriander
1 cup Organic Arborio Rice
4 cups of water or broth
1 bunch julienned Asparagus (Asparagus from Zuckerman’s Farm could be available at the market as early as 1-3 weeks from now! We’re excited!)
1 1/2 cups of Walnuts from Winter’s Fruit Tree
5-6 Shiitake mushrooms from Far West Fungi, chopped
Honey from Terra Savia
Olive oil from from Terra Savia
Balsamic Vinegar
Fresh Feta from Achadinha Cheese Co.

Instructions:

Add a teaspoon of butter to a pot and melt. Add 1 whole chopped asian pear and half of the asparagus with a light sprinkle of coriander. On low heat, lightly brown the pears and asparagus.

Add 1 cup arborio rice with 1 1/2 cups water or broth into the pot. Bring to a boil and reduce heat. In a separate pot, heat 2 1/2 cups of water or broth.

Throughout the duration of the rice cooking, periodically stir well. Halfway through cooking add the rest of the julienned asparagus. Once the liquid is absorbed, begin to add the hot water/broth (1 cup at a time). Cook and stir after each addition until the liquid is fully absorbed before adding another cup.

Simultaneously in a separate dry pan (without any oil) brown the walnuts.

In another pan, add oil and chopped shiitakes. Cook on low heat.  Towards the end, add less than 1 tablespoon each of honey and balsamic vinegar. Stir well. At culmination, add 2 tablespoons of water and let the shiitakes sit in the warm pan until dinner is served.

Once risotto is almost complete, add a little bit of the brine from the feta container.

Plate risotto and top with shiitake, walnuts, feta, and some freshly shaved asparagus and asian pear.

Ronald will guide you through his wide variety of dates for any sweet or savory craving. His Jumbo Medjool dates are the best for snacking, as they embody the true unique flavor of perfectly ripe Medjool dates from Bard Valley California. Also highly recommended are his unique, dainty, and incredibly sweet Khadrawy dates that melt in the mouth — a delectable treat! This week Palmero Date Shop will be introducing new Varietal Date Paste balls that are great for making Vegan Date Shakes, as featured in the recipe below.

Mercado Kitchen: Citrus Ginger Cookies

Orange zest and orange glaze add a fresh twist to these delicious ginger cookies. Pick up juicy navel oranges from Twin Girls Farm or mandarin oranges from Winters Fruit Tree to add this seasonal spin to a classic cookie. You can also make a variation substituting lemons for oranges. Try Meyer lemons from Winters Fruit Tree for their sweeter flavor.

The addition of citrus doesn’t mean these cookies are light on ginger flavor. Each chewy bite has a zing of ginger from the addition of three types of ginger: ground ginger, fresh grated ginger, and crystallized ginger.

Citrus ginger cookies are perfect for this time of year. Bake up a batch for a cookie swap or to share with friends and coworkers! And in the process fill your kitchen with the warm aroma of ginger, spices, and citrus baking in your oven.

Citrus Ginger Cookies

Adapted from 101Cookbooks.com

Ingredients:

1/2+ c large-grain sugar (such as organic cane sugar or turbinado)

1 naval orange or 2 mandarin oranges or 2 Meyer lemons

2 c flour
1 t baking soda
1 t cinnamon
1 t allspice
1/2 t salt
1/4 t white pepper
2 t ground ginger

1 stick (1/2 c) unsalted butter, room temperature
1/4 c unsulphured molasses
2/3 c sugar
1 T plus 1 t fresh ginger, peeled and grated
1 large egg, well beaten
1/2 c crystallized ginger, minced

1/2 c powdered sugar

Instructions:

Preheat oven to 350 degrees.

Zest the orange(s) or lemons to yield a heaping tablespoon of zest. Juice the fruit and reserve 2 tablespoons of the juice for making the glaze. Save the remaining juice for another use.

Whisk together the flour, baking soda, cinnamon, allspice, salt, white pepper, and ground ginger in a large bowl.

Heat the butter in a saucepan until just barely melted. Stir in the molasses, sugar, and fresh ginger. If the mixture is hot to touch, let it cool until it is lukewarm. Whisk in the egg and pour the mixture over the flour mixture. Add the crystallized ginger and orange or lemon zest. Stir until just combined. Refrigerate for at least 30 minutes.

Scoop a heaping teaspoon of dough and roll into a ball, then coat in large-grain sugar. Place sugar coated dough balls a few inches apart on a parchment-lined baking sheet. Bake for 10-12 minutes, until cookies puff up, get fragrant and crack. Cool on a wire rack.

Prepare the glaze by whisking together powdered sugar with 2 tablespoons orange or lemon juice. Dip cooled cookie tops in the glaze or use a pastry brush to apply the glaze. Sprinkle with more large-grain sugar.

Store in an airtight container. Makes about 45 cookies.
