Spotted at MCM: Three Babes Bakeshop

The sassy duo behind the organic, seasonal pies from Three Babes Bakeshop were spotted shopping at the market last Thursday. They picked up delicious berries from Yerena Farms (above) and sugar pie pumpkins from Blue House Farm (below).

Anna and Lenore can be found shopping at Mission Community Market every week – both for their pie business and to buy groceries for their apartment. They love that they get to see many of their friends from the SF food community there. They have been buying fruit from Poli and Sylvia Yerena since they launched their business, and are so impressed with Yerena Farms’ delicious berries all year round that they usually source all their berries from them. Lenore used to snack on berries meant for their pies, so now they have a rule that every Thursday she comes to MCM and buys her own personal flat of berries so that she can eat as many as she wants! Some of their other favorites at the market include tasty loaves of bread and delicious cookies from Marla Bakery, veggies from Happy Boy Farms, and pickles from Jarred SF Brine.

The berries and pumpkins Three Babes procured at the market are seasonal fillings for their amazingly flakey pie crust. Two of their favorite fall pies are pluot blackberry and pear raspberry.

With Thanksgiving around the corner, sugar pie pumpkin is very popular. They split and roast the sugar pie pumpkins and then scoop out and puree the flesh to make tasty pumpkin pies. While summer is their favorite season for pie fillings, fall is a close second with sugar pie pumpkins being at the top of their list!

You can order pies online from Three Babes Bakeshop or through Good Eggs. Get your Thanksgiving orders in and you might enjoy some Mission Community Market produce in your holiday pie this year! The babes can also be found selling their pies at the Ferry Plaza Farmers Market on Saturdays.

Try this sophisticated French twist on an apple pie and wow your guests at a dinner party! The tarte is baked in a skillet and turned out fresh from the oven onto a platter and voilà, dessert is served. This fun recipe is courtesy of our very own Mission Community Market vendor Marla Bakery. If you’ve tried the hand pies they sell at the market you know how wonderfully flaky the crust is. Here is your chance to try your hand at that flaky goodness yourself using their recipe!

Visit Hale’s Apple Farm at the market to find a delicious variety of seasonal apples organized from sweet to tart. They recommend baking with a variety of apples – we used Sleeping Beauties and Romes! Happy baking!

Tarte Tatin
Recipe by Marla Bakery
Yield 12″ Tarte Tatin
Ingredients:
For Pastry Dough:
1 lb pastry flour
1 tsp salt
12 oz (3 sticks) unsalted butter
1/3 c ice water
1/3 c bourbon
For Tarte Tatin:
7-9 good baking apples (e.g. Sleeping Beauty, Rome, etc from Hale Apple Farm)
1/2 c sugar
1/2 c brown sugar
juice of 1 lemon
pinch of salt
2 Tbl unsalted butter
Instructions:
For Dough:
Mix salt and flour together. Pour out onto a table and cut in cold butter, until very small pea sized chunks. Mix the ice water and bourbon together. Pour over dry mixture and work in with a bench scraper or pastry cutter. Try not to use your hands, this will warm the butter. Mixture will be very dry and crumbly, fold and press until you have a shaggy, cohesive mass. Wrap in parchment and chill at least 6 hours.
For Tarte Tatin:
Preheat oven to 375.

To make the Tarte Tatin, roll out dough to a rough circle about 1/4″ thick. Take a cast iron skillet or saute pan and trace the circumference of the pan onto a piece of parchment. Cut this out and use as a guide to cut a circle in the dough. Mark the middle of the dough with four small cuts and chill dough round. Meanwhile, peel apples and cut into quarters, slicing out the core. Mix apples, sugars, salt, and lemon juice and let sit until apples release their juice, about 20 mins. Strain apples and reserve juice. In your skillet or saute pan melt butter. and pour in sugar/apple juice mixture. Bring to a boil and stir until mixture begins to caramelize. When mixture is a golden brown color turn off heat and carefully place apples cut side up in pan. Don’t burn yourself! Apples should completely cover the bottom of the pan. Bring back to medium high flame and cook for 10 mins, covered with a lid to tenderize apples. Turn off heat, and carefully place your dough round on top of the apples and slide into the preheated oven for 25 to 30 mins. When done, pastry should be dark golden brown and you should see caramel bubbling around the sides of your pan. Pull out of the oven and let cool for 7 mins.

Carefully place a sheetpan or large plate over the top of the pan and quickly flip over to release your tarte tatin. If any apples are stuck to the pan, you can remove them with knife or spatula and place them on the pastry, no one will mind! Cool to room temp and serve with sweetened creme fraiche, ice cream or whatever your heart may desire. Enjoy!

Although a visit to the market offers inspiration to cook with fresh, interesting, and colorful ingredients, it can be difficult finding the time to create epic meals from scratch. Mission Community Market has some excellent options for those who are short on time to spend in the kitchen. We’ve created a list of seven awesome products at MCM to help you create that delicious and nutritious semi-homemade meal in a snap!

1. Home Maid Ravioli – Home Maid Ravioli Company carries several different types of freshly-made ravioli, pasta, and sauce. Highlights are Lobster Ravioli, Lemon Linguine, and their highly addicttive Garlic Cheese Dip which can be baked on sliced bread from Arizmendi to create some spectacular garlic bread. Although these pasta sauces are tasty on their own, they can be supplemented with produce such as onions and zucchini to make for a perfectly well-rounded meal.

2. Happy Boy Farms Salad Mix – Colorful, fresh and certified organic, these greens have Nasturtium flowers sprinkled on top for some extra color and bite. No need to wash or chop, these greens are ready to eat right out of the bag. Toss some dressing on top and serve as a perfect side with any meal… perhaps next to some Home Maid Pasta.

3. Chaac-Mool Corn Tortillas – Nothing beats a freshly made tortilla. Chaac-Mool’s hearty and wholesome creations, sold by the dozen, are so good they can be eaten plain as snacks, as quesadillas with some Broncha from Achadinha Cheese Company, or wrapped around delicious mix-ups at taco night.

4. Coastside Farms Smoked Salmon – Rich and smokey, this buttery fish is wild-caught weekly in Alaska and smoked in San Jose. Coastside’s flavors include Garlic, Black Pepper, Honey, or just Plain, and they’re all simply delicious. Add it to your Happy Boy Spring Mix to create an awesome lunch or light dinner!

5. Roli Roti Roasted Chicken and Potatoes – The line for Roli Roti Chicken often extends down the market for good reason. Too bad our photo doesn’t convey the glorious smells coming from their truck. As these herb-infused free-range chickens are spun on their rotisseries, all of their delectable juices fall onto organic rosemary fingerling potatoes. Take a whole chicken home with a pack of potatoes and let your imagination go wild; if you don’t end up wolfing it all down beforehand. An extra bonus is the delicious chicken stock you can make with the leftovers!

6. Jarred SF Brine Pickles  Organic produce preserved at the peak of its season, Jarred pickles can be snacked on, cooked with, or even thrown into a spicy cocktail. Check out Emiliana’s website for some inspiration and consider chopping up some pickled goodies to add to your Roli Roti potatoes or add some zing to your salad.

7. Marla Bakery Hand Pies – It’s no secret that Marla’s sweet treats are amazing, but did you know you can also get dinner at their booth? Every week, Amy and Joe lovingly create unique, delectable hand pies that can be taken home for a nice hearty treat. This week, choose from red wine & plum braised brisket or buttered summer squash, corn, and early girl tomato succotash. The flavors change weekly, so take a break from cooking and come down to see what they have to offer!

Meet Kevin, who was the lucky winner of $50 towards shopping at MCM in our neighbor appreciation raffle! Neighbors who received an MCM flier on their door were eligible to enter, and Kevin took home the prize!

How often do you come to the MCM?  This is my third time!

What are you buying?  I bought dinner for us– pulled pork from 4505 Meats, a Korean Fried Chicken & Waffle Sandwich from Bok Ssam, and nachos from Chaac-Mool.  I also got beets and spring onions from Blue House, nectarines from Twin Girls, raspberries from Yerena Farms, and a lamb tart from Marla Bakery.  I even have $4 left for next week!

What’s your favorite part of the market?  I like that it’s so close.  We don’t have a car, so it’s super easy and very straightforward.  Also, we just met some neighbors here, and there’s a sense of community.

What’s the best kept secret at MCM, or something you would like people to know about? There are not the same throngs of people here like other markets, it’s more mellow.
